A Little Canning

I wish I would have had more from the garden today to make bigger batches, but I had about 9 tomatoes and several peppers that were ready and I needed to do something with them, so I thought it was a good time to try some new recipes.

1 quart of vegetable juice ~ like V8
6oz of hot pepper sauce ~ similar to tabasco sauce

I got rave reviews from the men that did my taste testing today! They said the juice was way better than V8, I said, it's fresh, duh! And the comment on the sauce was that it had a good flavor but was very hot! Gotta love it when new recipes turn out the first time! And now I have two more things I can make and won't have to get at the store, I love that.

Dreaming of next years garden

I have been working for a few months on securing some land that I can garden on. Yes I currently garden here at home, but I have very little ground to use. I have pulled out a few old, not very nice looking shrubs so that I could obtain a little more space, but it still isn't much.

My dream is to have a large garden. I want to be able to grow at least 90% of the fruit and vegetables that my family will eat. I am willing to put in all the time and effort to can and freeze everything that we don't eat right away to sustain us through the rest of the year.

So today when a seed catalog came in the mail, I was so thrilled to sit down and dig through it. I made a wish list of everything I would like to grow if I can get as much land as I would like. I am sure I will have to cut my list down, but until I have ground secured I won't know how much, but I will continue dreaming.

Garden Update

The tomatoes are very slowly turning red. We have had an abundance of green tomatoes for a long time but this is the slowest I have ever seen tomatoes ripen. But we are grateful for the 8-12 that we have gotten so far, and anxiously await the rest. The hot peppers are blooming and starting to fruit like crazy now also. I am extremely anxious to see how these turn out, I am growing two varieties that I have never grown before!

And lastly I planted a few carrot seeds today for a fall harvest. I choose a white variety due to their mild flavor, hoping I can get my kids to eat them. The seed cost was $0.39.
